The answer is yes. Vampires do shit.

Being a mother of a 4 month old who eats/drinks exclusively breastmilk I can assure you he still shits...a lot. For your reference it is traditionally very runny, but occassionally has a higher chunk level. My doctor has said that this happens when fat particles conglom together during digestion. So I would assume, for a vampire, they generally experience diarrhea, except when indulging on the blood of an obese man with excess fat and plaque in the blood.

I think we are getting away from the original question here and that is do vampire's shit. I would say yes regardless of whether they eat food or just drink blood. I am guessing they would have very bad diarrhea from a strict liquid diet, but I think they would do more than just piss.

If you read Christopher Moore's book "Bloodsucking Fiends" there are several paragraphs devoted to a freshly turned Vampire taking the final shit of his unlife. I'd recommend reading the prequel first titled "You Suck".
Also in those books they puke if they eat human food, unless they mix some blood in with it. So maybe one could conclude that if they ate food with blood mixed in they may shit again.
